Mussels Stuffed with Pesto Siciliano

MUSSELS STUFFED WITH PESTO SICILIANO
X 4 PERSONS INGREDIENTS
1 kg mussels
2 cloves garlic
1 bunch of parsley
50 g grated pecorino cheese
a Sicilian pesto 190 g jar
fresh tomatoes (or peeled canned tomatoes) 400 g
extra virgin olive oil to taste.
pepper to taste.
Clean the mussels, wash them and place in a casserole, close the lid and put them on the fire to make them open.
Mince the parsley with 1 clove of garlic, pour the mixture into a bowl and mix it with beaten eggs,
